but it its grown organic coffee going into our organic roaster.

Our coffees are gourmet grade 1 – 100% Arabica Coffee, not
to be confused with
what our competitor’s sell, you will taste the
difference!
When roasting this coffee to its correct roasting level we will lose
almost 30% of its weight. Most companies mix this coffee with Robusta Beans to
cheapen the cost but, this also gives it a nasty bitterness. We
cost more «YES» but we only use 100% Arabica Coffee
Beans. There are no short cuts to great coffee. First you must start with
the highest quality coffee beans you can find then roast them to the correct
temperature & time. We also use the highest quality coffee bags and roast
in small batches to insure the highest quality.
Our Italian Espresso Organic Coffee Beans are known
for their very heavy, almost syrupy body and its low acidity. We mix
organic beans from Sumatra Indonesia, South America & Africa this
combination makes for a smooth, velvety, yet pronounced cup of coffee. This
powerful aroma coffee is direct and sturdy with nutty flavor. Our current lot of Sumatra Fair
Trade & Organic coffee beans are processed in Takengon, Sumatra, Indonesia;
it is the only one of its kind in North Sumatra producing high quality washed
and unwashed coffee.
This coffee is organically certified by SKAL to bring Organic
Sumatra Arabica to market; it is certified Fair Trade.
Farms range from one to four acres in size and are inter-planted
with fruits and vegetables, allowing farmers to be more self sufficient in
times of volatility. Farmers are also able to deliver their beans directly to
the factory, cutting out middlemen, therefore providing them higher prices for
their valuable product, and direct access to export markets. The beans are
grown at elevations ranging from 3,200 to 6,000 feet. Most fertilization is
done with organic matter because of the high cost of imported fertilizers. This
grade 1 Sumatra Mandheling is double picked. This world-class coffee is grown
in the Malay Archipelago of Indonesia near the city of Padang, and it is
prepared there by the natural method that employs unchecked fermentation.
Next we move on to Africa where we pick a winey tasting
coffee that adds the fruity flavor that African Coffees are famous for. With a
smooth winey almost fruity taste profile that melts in your mouth. These
beans are only used in the most expensive & complex coffee blends
because of their expensive and each year there is only a small crop.
Finally, we move on to South America where we pick up our last
coffee bean to finish off our well balanced Italian Espresso Organic
Coffee this coffee adds a layer of complex flavors that will make this
espresso dance on your pallet.
Cup characteristics: Earthy, nutty & with a touch of a
winey smoothness that is left on the palate. Sturdy, pronounced but not
overbearing body. Our Sumatra adds a syrupy body with hints of chocolate and
brown sugar.

I’m Gary I learned the art of
roasting coffee in Costa Rica where I went to study the fine art of roasting
this incredible bean we call coffee for long 6 years. I learned about roasting
coffees by the altitude & soil conditions in which they were grown. There
is a major difference in a coffee bean grown at lower altitude and a coffee
bean we call (SHB) grown at a much high altitude in this industry.
Every Morning We Start Roasting At 4:00 A.M.
I lit our Probat roasters for the day to roast only the coffees that have
been ordered the day before. Yes, we take our coffee seriously in fact very
seriously. Small batch roasting is more expensive because it limits the amount
of coffee we can roast in one day but, this roasting technique ensures that
each batch of coffee will be superior in quality and roasted evenly to the
desired roast profile, not mass produced. This process draws out the best
possible flavor in each batch. Small batch roasting permits a higher quality of
standards in coffee throughout the complete process: from choosing the correct
charge & drop temperature & then to slowly roasting each small batch to
perfection.
All Our Coffees Are
Packaged in 1 Pound Bags That Are Nitrogen flushed.
Nitrogen is an odorless and tasteless
gas that is heavier than oxygen. It is typically used in the food industry
because of its ability to reduce the staling process. Since Nitrogen has no
smell or taste, it won’t compromise the quality of the coffee taste but, will
ensure its freshness for a long period of time. When paired with our one way
values on our coffee bags it will keep your coffee fresh roasted coffee fresh
for months to come. This is a time consuming process & adds to the cost of
our coffee in both bags and labor but, we think it is worth it, because most
people only drink around a 1/2 to 3/4 of a pound of coffee a week.
